浓缩百香果汁的各种用法



Passion Fruit Juice(Concentrated)
Ingredients: Passion Fruit, filtered water, sugar, honey,
 citric acid, permitted preservative and food colour.


果酱面包
材料:百香果浓缩果汁、面包数片
做法:将百香果浓缩果汁用汤匙涂抹在面包上即可。
备注:做法简单而且不费时,最适合当做营养健康的早餐^^

冷饮
材料:百香果浓缩果汁、白开水、冰块
做法:倒入两分的百香果浓缩果汁和六分的白开水,搅拌均匀,再加入冰块即可。
备注:种子可以食用,口感极脆,富含高级蛋白,高级脂肪。做法简单,适合用于招待客人。

热饮
材料:百香果浓缩果汁、白开水、热水
做法:倒入两分的百香果浓缩果汁、五分的白开水和三分的热水,搅拌均匀即可。
备注:种子可以食用,适于餐前饮用,开胃健康。

百香鲜奶汁
材料:百香果浓缩果汁、低脂鲜奶(市面上盒装的普通低脂鲜奶即可)、冰块
做法:倒入两分的百香果浓缩果汁和六分的低脂鲜奶,搅拌均匀,再加入冰块即可。
备注:如果觉得百香果汁味道太单调或太酸,百香鲜奶汁肯定适合你^^

Passion Fruit is one of the most important fruits, specially for juices and desserts. It is a common fruit all over the country and there you can find 3 kinds of "Maracuyá" fruit. Colombia is the 2nd South American country, after Brazil, with megadiverse fruits.

It is locally called chinola, it is used to make juice and jams. Passion fruit-flavoured syrup is used on shaved ice, and the fruit is also eaten raw sprinkled with sugar.

The varieties are called yellow lilikoi and purple lilikoi and the fruit is normally eaten raw. Hawaiians usually crack the rind of the passion fruit either with their hands or teeth and suck out the flavorful pulp and seeds. Passion fruit can also be cut in half and the pulp can easily be scooped out with a spoon. Passion fruit-flavored syrup is a popular topping for shave ice. Ice cream and mochi are also flavored with passion fruit, as well as many other desserts such as cookies, cakes, and ice cream. Passion fruit is also favored as a jam or jelly, as well as a butter. Passion fruit is not widely available in stores, so most of the fruit comes from backyard gardens or wild groves. It can be found, however, in farmers' markets throughout the islands.

Tthere are two types of passionfruit (local name: 'markisa'), white flesh and yellow flesh. The white one is normally eaten straight as a fruit. The yellow one is commonly strained to obtain its juice, which is cooked with sugar to make thick syrup. Bottles or plastic jugs of concentrated syrup (generally produced in Sumatrafrom fruit grown in the Lake Tobaregion[citation needed]) are sold in many supermarkets. Dilution of one part syrup to four (or more) parts water is recommended.

It is called "passionfruit", it is available commercially both fresh and tinned. Fresh passionfruit is eaten for breakfast in the Summer months, is added to fruit salads, and fresh fruit pulp or passion fruit sauce is commonly used in desserts, including as a topping for pavlova (a regional meringue cake) and ice cream, a flavouring for cheesecake, and in the icing of vanilla slices. A passion fruit-flavoured soft drink called Passiona has also been manufactured in Australia for several decades.

Passion fruit is used mainly to make juice, prepare desserts like passion fruit mousse,cheesecake, ice cream, to flavor yogurts and cocktails.

Passion fruit is used to make juice or is eaten raw with chili powder and lime.

The fruit is known as "Parcha", it is widely believed to lower blood pressure, probably because it contains harmala alkaloids and is a mild RIMAPassion fruit juice is also very common there and is used in juices, ice cream or pastries.

Passion fruit is used in several desserts, especially cheesecakes. It is also drunk alone as passion fruit juice and used in ceviche variations and in cocktails, including the passion fruit sour, a variation of the Pisco Sour.

Passion fruit is commonly sold in public markets and in public schools. Some vendors sell the fruit with a straw in it to suck the seeds and juices inside. It is not very popular because of its sour flavor, and the fruit is very seasonal.

Passion fruit is blended with honey and ice to create refreshing smoothies.

Passion fruit, known locally as Granadilla (the yellow variety as Guavadilla), is used to flavor yogurt. It is also used to flavour soft drinks such as Schweppes Sparkling Granadilla and numerouscordial drinks. It is often eaten raw or used as a topping for cakes and tarts. Granadilla juice is commonly available in restaurants. The yellow variety is used for juice processing, while the purple variety is sold in fresh fruit markets.

It is often used as an ingredient in juice mixes.

关于百香果

学名Passiflora edulis
别名:受难果、藤桃、计时草、盾叶鬼臼、转枝莲、鸡蛋果、洋石榴热情果、巴西果、西番果、西番莲、果汁之王、时钟果、摇钱树。

百香果被相信是产於美洲的热带及亚洲的热带地区,但更多人相信它是 原产於巴西,在1610年间传入欧洲,当时西班牙传教士发现百香果花非常珍奇,花型极似基督的十字架刑具:柱头上3个分裂,极似 3根钉;花瓣红斑、恰似耶稣头部被蔷薇刺出血形象;5个花药,恰似受伤的伤痕。西班牙人以Passioflos名之,直接翻译就是“受难花”或“苦闷之花”。

也因为它的果汁散发出香蕉、菠萝、柠蒙、草莓、番桃、柠檬、芒果、酸梅。番石榴等多种水果的浓郁香味而被誉为百香果”,也是它的英文名Passionfruit译音,在国外还有果汁之王摇钱树等美称。另外, 百香果的花有5花萼5花瓣,像时钟上的字盘,所以又叫时钟果。

百香果是一种热带藤本攀附果树,果实甜酸可口,风味浓郁,芳香怡人。测定,目前已知西番莲果实含有超过132种以上的芳香物质,是世界上已知最芳香的水果之一,有果汁之王的美誉。它最适于用作香料,加在其他果汁中,或与其它水果(如芒果番石榴柑橙苹果等)加工混配成混合果汁,可以显著地提高这些水果汁的口感与香味;也可以做雪糕(冰淇淋)的果汁添加物质,或作为其它食品的添加剂以增进香味,改进品质。
目前世界上对西番莲的需求量稳步上升,尤其是欧洲北美等地区对西番莲果汁的需求正在不断增加,需进口大量西番莲原浆。近年来,百香果果汁也开始打入槟城市场,尤其年轻人尝过的都对它爱不释手,深深受它酸甜的香味所吸引。

世界上属于西番莲属(Passiflora)的植物有400多种,主要是观赏或装饰用,而可以新鲜食用的,就以紫色种和黄色种的百香果为主。
紫色种(P.edulis.Sims):果实为圆形或长圆形,果皮成熟时呈紫黑色。果实小、果汁含率低、糖度低、酸度低、产量也低。
黄色种(P.edulis var. flavicarpa Degener):果实为圆形或长圆形,果皮成熟时呈鲜黄色、果汁率高、产量高、香味浓郁、品质优良。
我们采用的百香果是马来西亚常见的品种,圆形果实,果皮成熟时呈暗红色,带有浅色斑点。橙黄色果肉包裹着黑色种子,香甜美味。

百香果属于后熟型的水果,自然成熟落地之后再放置23天,香气反而增加,更为天没。如果在正常温度下放置7天后,逐渐枯萎的外皮会变皱,果肉则渐渐起发酵的作用,果重减轻,风味变差。而生果(未成熟的果实)除了糖度较低、酸度高、香气不足、淀粉量较多之外,也可能含过量的氰化物,不宜使用。过量的氰化物在体内会引起头晕、头痛、呼吸加速甚至昏迷。但氰化物的含量会随着果实的成熟而逐渐消失。

The passion fruit is round to oval, either yellow or dark purple at maturity, with a soft to firm, juicy interior filled with numerous seeds. The fruit can be grown to eat or for its juice, which is often added to other fruit juices to enhance the aroma. The fruit shown are mature for juicing and culinary use. For eating right out of the fruit, the fruit should be allowed to wrinkle for a few days to raise the sugar levels and enhance the flavor.

The two types of passion fruit have clearly differing exterior appearances. The bright yellow variety of passion fruit, which is also known as the Golden Passion Fruit, can grow up to the size of a grapefruit, has a smooth, glossy, light and airy rind, and has been used as a rootstock for the Purple Passion Fruit in Australia. The dark purple passion fruit is smaller than a lemon, though it is less acidic than the yellow passion fruit, and has a richer aroma and flavor.In Colombia, the purple passion fruit is referred to as "gulupa", to distinguish it from the yellow maracuyáThe purple varieties of the fruit have been found to contain traces of cyanogenicglycosides in the skin.
